Rice Pancakes With Grilled Carrots

This recipe is perfect for when you have some leftover rice. This recipe is perfect to adjust to your own preference. You can easily add some other veggies and sauce or check what’s in the fridge and work with that.



 Ingredients (for 3-4 persons):

Pancakes

·     250-300 g cooked rice (I used brown rice)

·     2 eggs

·     4 tablespoons of self-raising four 

·     1 medium courgette (cabbage will also work really good)

·     100 ml milk 

·     1 garlic clove (grated)

·     2-3 spring onions

·     2 tablespoons of olive oil

·     Handful of coriander (chopped roughly)

·     1 teaspoon of salt

·     1 teaspoon of curry powder

·     Pinch of cayenne pepper (optional) 

·     Black pepper to taste

Carrots

·     6 carrots

·     1 tablespoon of cumin seeds

·     1 teaspoon of coriander seeds

·     Salt & pepper to taste

·     1 tablespoon of honey

·     Olive oil

Sauce

·     3 tablespoons of mayonnaise

·     1 tablespoon of soya sauce

·     1 tablespoon of spice hot sauce (I used chipotle sauce but sriracha is also fine)

·     Lime juice

·     Pepper & salt to taste

Cucumber salad

·     1 cucumber (chopped in small cubes)

·     1 tablespoon of nigella seeds

·     Lime juice

·     1 tablespoon of rice vinegar

·     Handful of mint

·     Pepper & salt to taste


Directions:

1.  Chop the spring onions, coriander and courgette and set aside.

2.  Put all the remaining ingredients in a bowl and mix till combined. If the batter has turned out to be slightly runny, add 1-2 tablespoons of flour.

3.  Heat some olive oil in a small pan, and add 3-4 tablespoons of the batter. Spread it out and cook for 2-3 minutes.

4.  Use a big spatula to flip the pancakes. Also bake other side till golden brown.

5. For the carrots: Cut them in 2. Rub in with olive oil and the spices. Spread on a baking sheet and bake for 30 minutes on 170°C. Add the honey after 30 minutes and bake for another 10 minutes on 180°C.

6. For the sauce just mix all the ingredients.

7. Same for the cucumber salad.

8. Serve the pancakes with the roasted carrots, drizzle the sauce, cucumber and mint on top.

9. If you like it sweet drizzle some honey to finish.
