I love waffles. Brussels, Liège — asking me to choose between them would be cruel.
That said, a waffle for breakfast? Sure, once in a while. But if you want to make it a regular thing without feeling like you’ve had dessert at 8 a.m., these coconut black bean waffles are the one.

They’re crispy (if you eat them right away — patience is not rewarded here), packed with fiber and protein, and totally satisfying. Basically: they fill you up, your body thanks you, and you get to eat waffles more often. Win-win.

Serve them with yogurt, fruit, and some roasted nuts, and you’ve got yourself a balanced breakfast-slash-snack that feels indulgent but isn’t.


They’ll keep covered for a few days, though they’ll go a bit soft — just pop them in the toaster to bring back the crunch.



Ingredients :

·     Recipe (makes about 15 waffles):

  • 40 g toasted coconut

  • 40 g coconut oil

  • 80 g cooked black beans (I used cooked dried ones, but canned is totally fine)

  • 460 g milk (or plant-based milk to keep it vegan)

  • 2 large eggs

  • 30 g oats

  • 250 g spelt flour

  • 40 g sugar

  • 25 g flaxseed

  • ½ tsp vanilla extract

  • ½ tsp cinnamon powder

  • ½ tsp baking powder

  • ¼ tsp salt

💡 No black beans? No problem. Kidney, brown, or white beans will do just fine — your friends won’t even notice the swap.


Directions:

  1. It honestly doesn’t get easier than this: toss everything into a blender and blend until smooth. Don’t worry if the batter’s a bit thicker than usual — that’s just the fiber doing its thing.

  2. Bake until all the batter’s gone. But careful: don’t overfill the waffle iron. This batter likes to expand.

  3. Serve however you like: yogurt, fruit, and nut butter are classic, but sour cream with warm caramelized apples, brown sugar, and a touch of cinnamon or clove? Pure autumn magic. Or skip the sugar & vanilla in the recipe and go savory — cheese and chutney works really well. Endless options!

Tip for parents:
Got a baby under one? Blend all the ingredients except the salt and sugar first. Cook a few mini waffles for the little one, then add the salt and sugar and cook the rest.
