Weetabix Chocolate Granola

This blog already got a chocolate granola recipe. But this one starts from a different base: instead of using oatmeal, I used ‘weetabix’. It is a high fibre cereal you can find in regular supermarket’s. And of course with chocolate because, chocolate….

This recipe is a good alternative for chocolate fanatics. If you still need your chocolate break but you want a healthier version (because of the fibrs, nuts & low in added sugars) this is a great option!

Ingredients (for 1 jar +/- 400g) :

  • 5 tablespoons of coconut oil

  • 5 tablespoons of ahorn syrup

  • 4 tablespoons of cacao powder

  • 3/4 teaspoon of salt

  • 2 teaspoons of Maca powder (optional)

  • 200 g of Weetabix cereal

  • 120 g sunflower seeds

  • 6 tablespoons of chia seeds

  • 1 handful of cacao nibs

  • 2 handfulls of dark chocolate drops

  • 50 g coconut flakes


Directions:

  1. Melt the coconut oil. Mix with the ahorn syrup, cacao powder, maca powder & salt. Set aside

  2. Using your hands, break down the weetabix in big chunks. (+/- 2 on 2 cm). It’s ok if some break down in very small pieces. Add this to a big bowl together with the chia & sunflower seeds.

  3. Add the wet cacao-coconut mixture to the dry ingredients and mix till everything is coated.

  4. Spread the mixture over 2 parchment covered baking sheets .

  5. Place in a preheated oven of 165°C for 15 minutes.

  6. After 15 minutes divide the coconut flakes over the granola and change places of the 2 baking sheets (so they bake evenly). Bake for another 10 minutes.

  7. Place out of the over and immediately divide the chocolate drops over the baking sheets. Let this melt for 5-10 minutes. Use a big spoon (and your hands) to mix the (almost) melted chocolate in the granola. At this point add the cacao nibs.

  8. Let cool down completely before attacking.
